Here is a quick fast and really good. its from Italy.
Take a whole lemon roll it under your palm on the counter firmly you want to crush the inside with out breaking the skin, take a fork and make holes around the lemon take a whole chicken salt and pepper in and out of the bird put the lemon inside toothpick the cavity closed and roast. the lemon flavor goes thru the whole bird and the juices are great.
